i think that it helps with filling if you cut the tops off of cakes and cut them in half. Then you have these openings and friction from the cake crumb. I also think it helps to let a cake set up for a while in the fridge. Also you made me laugh about the early music thing. You are too sophisticated, sherita. Just don't crack under the threat of vd.
Just wondering... With two people in your house/home, how do you eat all of the cakes when you bake 2?
BTW... I'm good at bread and basic meal preparation and cooking, but I gave up on cakes years ago!
@Kalvin - that makes a lot of sense. I used to cut my layers in half, but have fallen away from the practice.
@Charlie - I don't keep the cakes around the house. One I took for Easter dinner and the other one I took to work for a going away party for one of my co-workers. If I had cakes around the house, I'd be much heavier - in the bad way.
